Saint Rèmi
With a minimum of three years of ageing on the sediment, the Saint Rémi champagne acquires an excellent maturation while remaining fresh enough to be considered an excellent aperitif wine.
Its vinous qualities make it a perfect accompaniment to white meats, salted pork meats, game and fish.
- Assembly: pure cuvée (first pressing) of the cru from the heart of Champagne, for the most part Premier and grand Cru. The Pinot Noir (40 to 50%) comes mostly from vineyards in Maison d’Ay and Mareuil; the Chardonnay (30 to 35%) and the Pinot Meunier (15 to 25%) from the best vineyards in the heart of Champagne.
The reserve wines (25 to 40% assembly) are aged slowly in order to integrate the best wines without losing freshness. - Vinification: traditional, avoiding even the slightest oxidation.
After passing through the cuvée, the wines proceed to malolactic fermentation. For the past few years a part of the wine has been transferred into drums to increase complexity (this is wine that has undergone malolactic fermentation). -
Dosage:
Moderate Brut dosage (9g/l) guarantees the correct balance between freshness, yield and vinosity and does not mask the character and purity of the wine. - Ageing: on the dregs in the wine-cellar at a constant temperature of 12°C for an average of three years, which is considerably longer than the legal minimum of 15 months.
The date of pouring is written on the back label of every bottle.
Although very light when young, the Saint Rémi ages well by virtue of the quality of its assemblage (similar to that of Millesimato).
Over time, it maintains its balance and vivacity for almost two years, before evolving into a greater complexity and rotundity for another five years if preserved in a cool, dark cellar.
Gastronomic accompaniment: served cool but not ice cold (8°C), Saint Rémi is a perfect aperitif. Its vinosity allows it to be served with white meat, light salted meats served warm (paté) or cold, cold buffet or fish and seafood.
50% Pinot Noir, 35% Chardonnay and 15% Pinot Meunier.
The traditional assemblege of this cuvée includes at least 25 wines, of which 20% are reserve wines, thus guaranteeing, after ageing for three years in the cellar, a qualitative continuity that perpetuates the Sain Rémi tradition.
